This is my friend Rene Taylor’s recipe. My chemo was in the summertime and the tasty bite of this fresh, sweet Watermelon Salad kept me going. I use the smaller baby melons because they are... usually sweeter.
Cut the watermelon into 8-12 slices. Cut away the rind and cut the flesh into 1-inch chunks. Put into a large bowl.
Mix the watermelon with half of the lime juice. Add more lime juice and the sugar, mix to coat. Let the salad sit in the fridge to marinate and chill. Serve.
Chef Tips
During chemo, it’s OK to eat fresh fruits where the flesh is hermetically sealed inside the skin, like bananas, oranges, and melons. That said, it’s super important to thoroughly wash the outside skin before opening them with either your hands or knife, even bananas. You don’t want to bring those outside bacteria in.
