Directions

In a small bowl whisk the vinegar, salt, pepper, and maple syrup together.
Gradually beat in the olive oil until well blended. Taste for sharpness and adjust seasonings, if necessary.

Chef Tips

Add water to the dressings to cut down on the oil. For a heavier dressing , add an extra spoon of oil instead of the water.

Maple syrup is very sweet. Start by adding just 1 teaspoon of maple syrup to the dressing, taste it, then beat in the other teaspoon if needed.
