  • 1 lemon, well washed and dried (See Ann’s Tip)
  • Boiling filtered water
  • Sugar or honey, to taste (optional)

  1. With a sharp knife or peeler, thinly shave off a 1-inch long strip of peel off the lemon, one per cup. Take care not to include the white pith.
  2. Put the strip of peel into a cup or mug and pour boiling water over it. Steep for 3 to 5 minutes to get a delicious pale yellow cup of lemony Canarino.

Chef Tips

Try to buy organic citrus when using the peel for cooking, especially when in chemo treatment. Regular citrus peel can have more pesticides on it.
