  • 6 medium beets (12 ounces), boiled and peeled
  • 3 tablespoons tahini
  • 1 small garlic clove
  • Juice from half a medium lemon
  • 1 teaspoon lemon zest, plus an extra pinch for garnish
  • Sea salt, to taste

Directions

  1. Blend all ingredients in a food processor until smooth. Taste for seasoning. Sprinkle with the extra lemon zest and drizzle with olive oil.
  2. Serve with Whole Wheat Pita Chips or celery sticks.

If you want to save some time, look for Rocal vacuum packed, pre-cooked and peeled beets in the supermarket. These beets are a great pantry standby. They are vinegar free and, left unopened, will keep almost indefinitely.
