If you’re on chemo and don’t want to risk eating the raw egg in your favorite Caesar Salad, look no further. We assure you that this super simple eggless Yogurt Caesar Dressing will satisfy... any Caesar cravings you may be feeling, plus this is actually a great tasting substitute for anytime. It’s good on steamed veggies too, not just Romaine, so give it a try.
Smash the garlic clove with the flat side of a knife. Sprinkle with salt and drag the heel of the knife over the garlic, chopping and scraping the knife over the board until you have a paste.
In a bowl, whisk the garlic paste, minced anchovies, Dijon, yogurt, pepper, and half the cheese until well blended. Serve tossed with Romaine lettuce and sprinkled with the remaining Parmesan cheese.
Chef Tips
If you can find them, use salted anchovies for this. Be sure to rinse them well before chopping.
If you’re not a fan of anchovies no matter how they’re packed, try adding a couple of teaspoons of rinsed capers, finely chopped, to your dressing.
