Ingredients

    2 tablespoons cumin seeds

    1 tablespoon black peppercorns

    1 tablespoon of white peppercorns

    2 tablespoons of dried oregano

    2 tablespoons coarse kosher salt

Directions

  1. Heat a heavy pan over a medium flame. Add the cumin seeds, black peppercorns and white peppercorns. Toast for 1 minute or until fragrant. Turn off the heat. Spoon the spices into a bowl to stop the cooking.
  2. Using a mortar or a spice grinder grind all the spices together until pulverized. Set aside in a bowl.
  3. Crumble the dried oregano with your fingertips. Mix the crumbled oregano and salt into the ground the spices until all the ingredients are well combined. Store the spice mixture in an airtight container for future use.
