Place lentils in a large pot with 3 cups water, garlic, and salt. Bring to a boil then reduce to a simmer, cover, and cook until tender, about 15-20 minutes. Drain enough water to keep lentils just barely submerged in the cooking liquid. Set aside off heat when finished.
Mix in sesame oil, seeds, and green onion with cooked lentils, being careful not to mash lentils, and serve.
