This Berry Granita is a great and simple way to use summer berries on warm days. It also is great for days when you want a sweet treat that’s not too rich.


  • 2 cups ripe berries (blueberries, strawberries, raspberries or blackberries)
  • Brown sugar or maple syrup, to taste
  • Juice of ½ a lemon

  1. In a food processor or blender, blend the berries, sugar, and lemon juice until smooth. Pour onto a baking tray and put in the freezer.
  2. Check the tray every 20 minutes or so to scrape the ice crystals off the sides and bottom until you end up with a fluffy, snowy consistency, about 2 hours.

Chef Tips

If you have frozen berries in your freezer, you can get a similar result by processing them from frozen with the sugar and lemon juice plus ½ cup of water. Try it!
