Not surprisingly, the cuisine of Sweden – a northern nation of long, cold winters – has many delicious soups to choose from. And there’s no better bowl than the nutrient-filled Swedish spinach soup known locally as spenatsoppa. This soup abounds in leafy greens, so it is full of antioxidants to help repair the damage caused during chemo. Thanks to the cancer-fighting green ingredients, this humble dish supplies the antioxidants vitamins C and beta carotene from vitamin A.

If you are trying to maintain your weight or want extra protein, you can serve this soup with hardboiled eggs, a traditional Swedish garnish. Along with a loaf of crusty, whole grain bread.

Depending on what is in season, you can vary the greens you choose for this soup. Swiss chard, spinach, kale, or a mixture of all three would fit perfectly in this dish.
