Ingredients

    ¼ cup olive oil

    1 beefsteak tomatoes, small diced

    1 medium onion, small dice

    3 cloves garlic, minced

    ½ cup chopped cilantro

    2 limes, zested and juiced

    salt and pepper to taste

Directions

    1. In a medium saute pan over medium heat add olive oil. Add tomatoes, onions and garlic. Saute for about 10 minutes, or until onions are soft.
    2. Remove from heat. Add cilantro, lime juice and zest. Toss to combine.
    3. Serve with tacos, chicken, fish or on a salad.
