Fresh spinach is great. Sautéed spinach is even better. But sautéed spinach combined with tomatoes and ricotta cheese is just heavenly. While the ricotta cheese in this Ricotta-Spinach Toast provides a fresh base...

  • 1 tablespoon olive oil, divided
  • 1 cup spinach
  • 1 cup ricotta cheese
  • 1 teaspoon lemon juice
  • salt and pepper to taste
  • 4 slices of whole wheat bread
  • sun dried tomatoes, for garnish (optional)
