Ingredients

    1 (14-ounce) box good quality frozen puff pastry, thawed according to packet instructions

    1 tablespoon apricot jam

    7 tablespoons sweet butter, at room temperature

    ¼ cup powdered sugar

    2 eggs, lightly beaten, divided.

    1 cup almond flour

Directions

  1. Preheat the oven to 400F. Line a baking sheet with parchment paper.
  2. Divide the puff pastry into 2 equal parts and form into a10 inch round. I find it easier to stretch store bought dough into shape by hand than by rolling, Lay one on the lined baking sheet and spread thinly with the apricot jam up to 1 inch from the edge.
  3. Beat the butter and caster sugar together until light and fluffy. Beat in half the beaten egg. Gradually stir in the almond flour. Spoon the mixture over the jam and spread it evenly to cover, up to 1 inch from the edge.
  4. Brush the raw edges of the pastry with water and cover with the second round. Press the edges together to seal. With a pastry brush, brush off any flour from the top of the galette. Lightly score the top of the pastry with a crosshatch pattern – it shouldn’t cut through. Generously brush the top and sides of the galette all over with the remaining beaten egg. Bake 30 minutes or until crisp, puffy and golden. Serve warm or at room temperature.
