These Festive Turkey meatballs are all the favorite parts about the holidays in one bite. These meatballs are the perfect weeknight fall side along with a crisp salad, and are definitely a perfect party appetizer....


Ingredients

  • 1 pound ground turkey
  • 1/2 cup uncooked white rice
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup onion, finely chopped
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cups chicken stock

Directions

  1. Preheat oven to 350º F. Lightly grease a 9” x 13” baking dish with cooking spray.
  2. In a large bowl, combine ground turkey, rice, cranberries, onion, egg, milk, garlic powder, salt and pepper.
  3. Shape mixture into golf ball sized meatballs. Place 1 inch apart on baking sheet.
  4. Pour chicken stock over meatballs. Cover pan tightly with aluminum foil.
  5. Bake about 45 minutes, until the meatballs are cooked through and the rice is soft.
