Red onions are full of cancer fighting flavonoids but they rarely get the chance to shine on their own, until now. We’ve simply baked sweet red onions in sweet balsamic vinegar. They are so delicious.

Ingredients

2 medium red onions, peeled and quartered
2 tablespoons balsamic vinegar
1 tablespoon olive oil
Salt and pepper, to taste

Directions

Preheat the oven to 400 degrees.
Place the quartered onions onto a baking tray lined with parchment paper. Drizzle with oil and vinegar, a generous pinch of salt and a pepper.
Roast for 30 minutes, flipping halfway through until caramelized and tender. Serve warm.
