Everything Eggplant!

There are so many types of eggplant. There are skinny purple Asian eggplants, or the tiny lilac-streaked “fairy” and Dominican eggplants, small round bitter green varieties found in South Asian markets, and even ivory white heirloom eggplants. And of course the more familiar large-and-in-charge Italian eggplants. All are delicious and all are easy to cook.
