Roasting Vegetables

When you're not in the mood for lots of prep, simply roasting whatever's left in the crisper is a sure-fire way to get food on the table. Just toss vegetables with olive oil and salt, and throw it in a 425F oven until golden brown. Small creative choices like a dash of curry spices or that Italian Seasoning Blend hiding in the back of your pantry can make a big impact.
