1 (15 ounce) can chickpeas, drained and rinsed
1 tablespoon lemon juice
1 ½ teaspoons olive oil
1 tablespoon parsley, chopped
1-2 tablespoons Greek yogurt
Salt and pepper, to taste
6 slices of whole wheat bread
1 English cucumber, sliced

Directions

In a medium sized bowl, mash chickpeas with a potato masher or fork. Mix in lemon juice, olive oil, and parsley. Season with salt and pepper.
Toast bread slices until golden brown.
Divide the chickpea mixture between the 6 pieces of toast and spread evenly. Top the toast with cucumbers.
