If you’re not feeling well due to the rigors of treatment, cooking, especially with kids, can seem a daunting task. But if you keep things simple and make dishes the family can easily help out with, the chore could be fun.
Here are a few of Ann’s family friendly and cancer-fighting meal ideas.
Pizza:
It gets a bad rap, but the classic Italian pies can be the perfect vehicle for a well-balanced meal. The easiest way to make pizza when you’re tired is to buy premade whole-wheat pizza crust. Try our Chicken Sausage and Kale Pizza this one-dish meal provides cancer fighters like lycopene and cruciferous veggies, as well as some much-needed protein. Though it might seem a far fetch for kids to go for our Goat Cheese and Spinach Pizza you might be surprised how much they like the creaminess of the goat cheese.
Tacos:
With tacos and tots, building your own is certainly the way to go. It’s as simple as poaching some chicken, putting black beans on the stove, and chopping some veggies. Have the kids grate some cheese and set up the buffet. The whole family will get low-fat protein from the chicken and beans as well as plenty of cancer-fighting phytonutrients from the veggies. Desserts:
Our Tofu Chocolate Pudding is surprisingly tasty and is a great way to convince kids – and maybe a few adults — that tofu can be delicious. All you need is a blender or food processor, some silken tofu, and some melted chocolate for the kids to spoon in. Though there’s been controversy about soy and cancer, a moderate amount, is safe. So enjoy this delicious dessert guilt free.
Cookies are also a great way to introduce kids to baking. Our Peanut Butter, Oat and Date, and Chocolate Chip Cookies are super simple, though all those ingredients will make your helpers think they’ve achieved something big. These should still be eaten in moderation, but the healthy ingredients mean a few hands in the cookie jar isn’t the end of the world.
