  • 1 medium shallot, minced
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon garam marsala
  • 1 tablespoon chopped cilantro

Chef Tips

If you’re not keen on cilantro, use chopped mint.

This recipe makes enough marinade for ¾ lb of chicken breasts or fish fillets.
