Ingredients

    2 tablespoons olive oil

    1 small onion, sliced

    1 head fennel, sliced

    2 teaspoons minced fresh ginger

    1 apple, cored and sliced

    2 cups sauerkraut

    ½ teaspoon caraway seeds

    Pinch of cinnamon

    4 Chicken Bratwursts

Directions

  1. In a large sauté pan over medium heat, add olive oil. Add onion, fennel and ginger. Sauté until onion and fennel are soft, about 10 minutes
  2. Add apple and continue cooking until apples are browned and slightly reduced, about 5 minutes.
  3. In a separate sauté pan over medium high heat, cook bratwurst, turning occasionally until all sides are browned and crispy.
  4. Add sauerkraut, caraway seeds, and cinnamon to onions, fennel, and apples. Continue cooking and stirring occasionally until sauerkraut is fully incorporated and warmed through.
