Ingredients


  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 tablespoon lemon juice
  • 1 ½ teaspoons olive oil
  • 1 tablespoon parsley, chopped
  • 1-2 tablespoons Greek yogurt
  • Salt and pepper, to taste
  • 6 slices of whole wheat bread
  • 1 English cucumber, sliced

Directions

  1. In a medium sized bowl, mash chickpeas with a potato masher or fork. Mix in lemon juice, olive oil, and parsley. Season with salt and pepper.
  2. Toast bread slices until golden brown.
  3. Divide the chickpea mixture between the 6 pieces of toast and spread evenly. Top the toast with cucumbers.
